I love trying new banana bread recipes - it’s super delicious and a winner with the kids. This loaf uses coconut oil and almond meal and the combination makes this so moist, the texture is SO good. Add the ingredients to your shopping list this weekend, set aside a few bananas now to ripen up and do some baking, it’s very simple and you will not regret it.
1/3 cup coconut oil, melted
3 overripe bananas, mashed
1/2 cup raw sugar
2 eggs, room temperature
1/2 cup greek yogurt
2 teaspoon vanilla extract
1 cup wholemeal (or plain) flour
1/2 cup almond meal
3/4 teaspoon baking soda
1/2 teaspoon salt
Preheat oven to 180
Line a loaf tin with baking paper so that it will be easy to lift the bread out once cooked.
Mash your bananas
Mix together all of your wet ingredients and the sugar - sugar, banana, coconut oil, eggs, yoghurt, vanilla.
Add your flour, almond meal, baking soda and salt.
Mix until just combined.
Pour into your tray.
I add a sliced banana on top to look faaancy.
Bake in the oven for about 45 but it may take 60. Check it with a knife, the knife should be coming out clean once all the batter has cooked. Allow it to cool a bit before taking out of the tray.
