Homemade Pesto

If you are new to cooking, or don’t really love spending ages in the kitchen, or just looking for some quick and easy dinner ideas this is a great one to begin with. It’s so delicious. You can play with the quantities and level of smoothness. Mine is a little different each time depending on which herbs / nuts / seeds I have.

For this I blended a huge bunch of basil, the same amount of de-stemmed kale, a handful of pumpkin seeds, juice of half a lemon, two garlic cloves, a generous glug of extra virgin olive oil and pinch of sea salt. Stir this through your favourite pasta and you have yourself a very delicious meal (add some protein too!)

You can alternatively use fresh coriander in place of the basil, or spinach in place of the kale, tahini or cashews in place of pumpkin seeds. Make it yours. Daisy x
