Daisy regularly reminds me that it’s great for kids to get a mix of protein sources including those from plant protein e.g. lentils, beans, tofu etc. Here I’ve added Quinoa to Ben’s meatballs! Quinoa is a complete protein source with the added benefit of fibre 💫 Freeze some for later.500g beef mince
1/2 cup quinoa
1 carrot, grated
1 tsp oregano
Cook quinoa in water or vegetable stock.
Mix mince, carrot, oregano, quinoa and egg together.
Make into meatballs.
Place in 180 oven 10-15 minutes.
Serve to the monsters.
