Serve them for lunch, dinner or snacks - perfect for the lunch box or playground.
2 medium sweet potatoes
1-2 cups spinach finely shredded or blitzed
1/2 cup grated cheese
1 cup breadcrumbs
1 free range egg
1 tsp smoked paprika
Preheat oven to 200 degrees.
Cook the sweet potatoes, we microwaved them for 8-10 mins, let them cool and then pulled the skin off.
Mash the sweet potato, add the cheese, breadcrumbs, spinach and egg - mix well.
Shape the tater tots.
Put them on a lined baking tray and in the oven for 25-30 mins.
