1/3 cup coconut oil, melted
3 overripe bananas, mashed
1/2 cup raw sugar
2 eggs, room temperature
1/2 cup greek yoghurt
2 teaspoon vanilla extract
1 cup wholemeal (or plain) flour
1/2 cup almond meal
3/4 teaspoon baking powder
1/2 teaspoon salt
Method:
Preheat your oven to 180°C.
Line a loaf tin with baking paper to avoid sticking.
In a large bowl, mash the bananas. Combine the bananas with the sugar, coconut oil, eggs, yoghurt and vanilla.
Add flour, almond meal, baking powder and salt. Mix until just combined. Pour into lined baking tin.
Optional: add sliced banana and/or a sprinkle of seeds on top.
Bake for ~45 minutes. Check the loaf is cooked through by inserting a knife, it will come out clean when ready.
Let the loaf cool before slicing.
