Chickpea Flour Fritters for Hungry Toddlers (and Busy Parents!)

Chickpea Flour (AKA gram flour or besan flour) is rich in protein, fibre and minerals such as folate and iron. If you aren't usually a chickpea lover this is great way to utilise their nutritional benefits in a different form. 

You can choose whichever veggies you have on hand and experiment with your preferred herbs and spices. 

Ingredients:

1.5 cups of chickpea flour
1 cup filtered water
1 teaspoon mild curry powder
1 teaspoon onion powder
1 teaspoon garlic powder
(optional season with salt and pepper)
1 zucchini (medium-ish)
1 carrot (small-ish)
1/3 cup frozen peas (and or/sweetcorn)
Extra Virgin Olive Oil

Method:

I always use my cast iron pan for a little extra iron and it is free from from PFAs.

Mix chickpea flour, spices and seasoning in a bowl.
Add water. Use a whisk to beat into a smooth batter.
Grate zucchini and carrot. Add all veggies to the batter and mix well.
Heat oil in pan on a medium heat. 
Add 1 heaped tablespoon per fritter to the pan and when you see bubbles starting to form and a golden crust forming underneath, flip the fritter.
Cook the other side until firm and golden.
Flip back and forth a few times to ensure the fritters are cooked through but not burnt.

Serve hot or cold with dip of choice. Great for lunch boxes. Store in the fridge for 3 days or in the freezer for 3 months.
