Nutritionist Tip: Always store nuts, seeds, and their pastes (tahini) or flour (almond meal) in the fridge or freezer to prevent the fatty acid molecules from going rancid in the heat / light / air.
The cookies are dairy free, vegan, and gluten free (if using GF oats).
1/2 cup tahini
1/3 cup pure maple syrup
1 tsp vanilla extract
1 cup rolled oats
4 tablespoon almond meal
1 tablespoon chia seeds
1 teaspoons baking powder
1/3 cup dried cranberries
1/4 cup dark choc chips
a pinch of sea salt
1. In a large bowl, mix the tahini, pure maple syrup, vanilla extract
2. Add all the dry ingredients in (one by one and stir)
3. Line and baking tray and roll 9 cookies
4. Bake for 10-15 minutes, @ 180°C - when they just starting to turn golden
5. Let cool before moving / eating
6. Store in the fridge for unto 5 days or the freezer for 3 months
