These Cranberry and Dark Choc Cookies are the perfect one handed nutrient dense snack for new mamas (and old mamas, and their partners!)

They are rich in antioxidants, fibre, healthy fats and protein. If you have a whole foods pantry you probably have most of the ingredients on hand!

Each quality ingredient used is carefully chosen to create this nutritious and delicious snack.

Nutritionist Tip: Always store nuts, seeds, and their pastes (tahini) or flour (almond meal) in the fridge or freezer to prevent the fatty acid molecules from going rancid in the heat / light / air.

Ingredients for Cranberry and Dark Choc Cookies:

The cookies are dairy free, vegan, and gluten free (if using GF oats).

1/2 cup tahini

1/3 cup pure maple syrup

1 tsp vanilla extract

1 cup rolled oats

4 tablespoon almond meal

1 tablespoon chia seeds

1 teaspoons baking powder

1/3 cup dried cranberries

1/4 cup dark choc chips

a pinch of sea salt

Method for Cranberry and Dark Choc Cookies:

1. In a large bowl, mix the tahini, pure maple syrup, vanilla extract

2. Add all the dry ingredients in (one by one and stir)

3. Line and baking tray and roll 9 cookies

4. Bake for 10-15 minutes, @ 180°C - when they just starting to turn golden

5. Let cool before moving / eating

6. Store in the fridge for unto 5 days or the freezer for 3 months
