These edamame fritters are one of those recipes I find myself making on repeat - not because they’re fancy, but because they genuinely make life easier.

They’re protein-rich, veggie-packed and incredibly versatile. We eat them for breakfast with eggs, tuck them into lunchboxes, serve them for dinner with a simple salad, or grab them straight from the fridge as a snack. They’re one of those rare foods that works across the whole day.

From a practical point of view, I love that they’re freezer friendly and reheat beautifully, which makes them perfect for busy weeks. You can batch cook them, freeze them, and always have something nourishing ready to go.

They’re also very kid friendly - mild in flavour, soft on the inside, lightly crisp on the outside - while still offering a solid protein hit thanks to the edamame and eggs.

Ingredients

  • 1½ cups edamame beans (frozen, thawed)

  • 2 eggs

  • ½ cup feta, crumbled

  • ⅓ cup plain flour

  • 2 tbsp olive oil (in the mix)

  • 1 tbsp lemon juice

  • 1 tsp garlic powder or bagel everything seasoning

  • ½ tsp sea salt

  • Black pepper, to taste

Optional add-ins

  • 2 tbsp fresh herbs (parsley, dill or chives)

  • 2 tbsp grated zucchini, squeezed dry

  • ¼ tsp smoked paprika or cumin


Note: If you want to use peas instead of edamame, increase the flour to ½ cup and add a little more salt to balance the sweetness.
