Protein packed Edamame Guacamole Recipe that you, your friends and your toddler will gobble up!

Unless you've been living under a rock, you probably know we want to try and get healthy fats and protein into every meal and snack, alongside those yummy carbs. I often have Hummus and Guac on the go with some pita chips or rice cakes for afternoon nibbles. This lemony-edamame-avocado hits all the nutrient goals in one bowl and it's SO delicious!

Ingredients:

1 x large perfectly ripe avocado (HEALTHY FATS)

1 x bag of frozen shelled edamame 200g (PROTEIN)

1 x small garlic clove

1 x juice of half a lemon

1 x small handful of coriander (optional - I know there are some haters out there)

Extra Virgin Olive Oil (EVOO)

Seasoning optional

Method:

Defrost the edamame in water, rinse and drain.
Add the avocado, edamame, garlic, lemon juice and coriander to a blender and blitz until smooth.
Spoon the dip into a bowl and drizzle with EVOO. This helps to keep it from browning too.
Serve with veggies sticks, crackers, rice cakes, fresh bread or a big dollop in your Salad Bowl is also delicious.
