These Halloumi and Veggie Skewers were the unexpected star of our weekend BBQ. You know the kind of dish you casually throw together, only to have everyone hovering around the grill asking, “Wait… what’s on these?” Yep. That one.
The best part? They come together in minutes with simple ingredients, but taste like you put in way more effort than you actually did. Salty, golden halloumi paired with colourful, smoky veggies is one of those combinations that just works - especially when it’s fresh off the BBQ with those irresistible charred edges.
If you’re lucky enough to have leftovers (a rare occurrence, honestly), they make an incredible lunch the next day - tucked into wraps, tossed through a salad, or eaten straight from the fridge while standing in front of it.
Skewer Ingredients (makes approx 10 skewers - see photo below)
450g Halloumi (we like the Dodoni Authentic Cypriot Halloumi)
200g punnet cherry tomatoes (the sweet solanato grape toms are delicious)
1 large or 2 small zucchini
1 red onion
1 large or 2 small red capsicums
Skewer sticks
Dressing Ingredients
1/3 extra virgin olive oil
juice 1/2 lemon
1 tsp dried oregano
1 garlic clove, minced
1 teaspoon dijon or whole grain mustard
optional: 1/2 teaspoon honey
Method
- cut all the ingredients into bitesize pieces
- to make it fancy user a peeler to make the zucchini into ribbons (see photos below)
- skewer the halloumi and veggies
- combine the dressing ingredients
- spoon the dressing generously over the skewers
- cook on the hot BBQ, grill or in a frying pan until the halloumi is golden and the veggies are soft and slightly charred
