Healthy Pumpkin Muffins

When I call these muffins 'Healthy Pumpkin Muffins', my 5 year old won't touch them. However if I just call them muffins, he LOVES them and just refers to them as banana bread. These pumpkin muffins are really easy to make and full of all the good stuff. You can easily change up the ingredients to include what you have on hand.

Ingredients:

1 cup plain white flour

1 cup wholemeal spelt flour

1 tsp baking soda

1/2 tsp baking powder

3/4 cup extra virgin olive oil

3 large eggs, lightly whisked

3/4 cup maple syrup

1 tsp vanilla extract

3 cups grated pumpkin

5 dates, roughly chopped

1 apple, grated

Method:

Preheat oven to 160 degrees celcius

Mix all of the dry ingredients together.

Mix all of the wet ingredients together.

Combine dry with wet and mix until combined.

Stir in the pumpkin, apple and dates last.

Add to greased bread tin or muffin trays.

Bake 45-60 if in a bread tin or 30 mins if in a muffin tray - until cooked through.

These healthy pumpkin muffins make a perfect snack for the kiddies (and adults), a great addition to a lunch box, delish served warm with yoghurt and fresh fruit.
