This rice is SO delicious. Once you try it you just can't go back!
Miso Butter Rice
Ingredients:
1.5 cups (uncooked) Rice, cooked (white or brown)
1 TBSP Olive Oil (15ml)
1 TBSP Butter (15ml) (if vegan or dairy free try @budeli.world)
1 TBSP White Miso (15ml)
1 TBSP Water (15ml)
2 x Fresh Sweetcorn on the Cob (organic if possible), sliced off the cob
1 x Spring Onion, finely sliced
- Serve with: garlicky protein, your favourite greens, avocado & lime 🥣
Method:
- cook your rice and set aside, keeping it warm
- add oil and butter to pot and heat on a medium heat
- add sliced spring onion and sauté until softened but not browning
- add the sweetcorn kernels and sauté until just bright yellow (to maintain some freshness and bite)
- turn off the heat
- mix miso and water into a runny paste, add to the corn
- stir the rice into the corn
- it is now ready to serve with your choice of protein, avocado and lime. YUM
Nutrition Tip: If you can find an unpasteurised miso like this one, it will be full of gut loving probiotics. Add to your cooking after you have turned off the heat to maintain it's probiotics and nutritional value.
