No Bake Energy Bar Recipe (V, VG, DF, GF)

No-Bake Energy Bar Recipe

No-bake, nutrient dense, energy-bars. They are nutty, chocolatey, vegan, rich in protein, healthy fats and fibre! 

Ingredients
100g raw cashews

40g of your fave dark chocolate (we used 85% Lindt
)
60g of your fave protein powder (we used Amazonia RAW chocolate protein)
1/3 cup cacao powder (that’s not cocoa)
450g whole pitted prunes
1/4 cup pure peanut butter (we love Mayvers!)

1 tablespoon vanilla extract

1/3 cup chia seeds



Method
Add cashews, chocolate, protein powder and cacao powder to the food processor.
Blend to breadcrumb type consistency.
Put aside in a bowl.

Place prunes (pits removed) in the food processor with peanut butter and vanilla essence, and blend until well combined.
 (note: the prunes we use are quite wet, you may need to add a SPLASH of water if yours are drier).

Now add the dry mix back into the food processor with the prunes, along with the chia seeds and blend until well combined.
You will likely need to scrape down the sides.

Press mixture into a lined tray.
Place in the freezer for 2 hours.
Slice and store in the fridge.
