Recipe: Oat & Peanut Butter Cups (V, DF)

Super simple to make and you probably have all of the ingredients on hand at any time. A good one to get the kids involved with if you can handle the sticky mess. 

Ingredients:
1 cup peanut butter
1/2 cup honey
2 cups oats
1 cup Rice Bubbles
250g chocolate
1 tbsp coconut oil

Method:
Mix peanut butter and honey on a low heat until combined.
Stir in oats and Rice Bubbles.
Melt chocolate and coconut oil.
Press oat mixture into cupcake moulds (well greased if not silicone trays).
Top with melted choc.
Pop in freezer to set.
Store in fridge.

These yummy bites are not only delicious snacks for kids but are great snacks to have on hand for a new mum.
