Quick & Easy Banana Muffin Recipe
It's getting to that point in the school term where my energy for homemade snacks is waning and more and more packets are creeping in. Which is fine. But I had a heap of bananas last week and decided to do a big cook up of muffins and lunchbox snacks for the freezer, to lighten the guilt. The kids have been smashing them so it's a good recipe to save!
Ingredients:
1 1/2 cups plain or spelt flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
6 dates, roughly chopped
3 large mashed bananas
120 ml extra virgin olive oil
120 ml maple syrup
1 large egg
1 tsp vanilla extract
40 ml (2 tbsp) milk
Preheat oven to 180 degrees Celsius.
Measure all of the dry ingredients into a large bowl, mix well. Mix all of the wet ingredients in a bowl separately, add to the dry ingredients and combine together.
Spray silicone mini muffin tray with extra virgin olive oil. Spoon mixture into tray. Place into the oven for 15-20 mins - keep an eye on it. Cool and enjoy! These freeze really well.
