[green pancakes] GREEN PANCAKES - but you really can’t taste the green! Weekends were made for pancakes, right? 💚 INGREDIENTS 1/2 cup rolled oats 1/2 cup soy milk or other milk of choice 1 small banana 1/2 teaspoon baking soda 1 egg or “chia-egg” (1 tablespoon chia seeds + 2 tablespoons water) handful of fresh greens (spinach or kale) Optional toppings: maple syrup, seeds, yoghurt, fruit METHOD Blend all ingredients to a smooth batter. Cook on a low heat with a drizzle of extra virgin olive oil or coconut oil. We have served with pure maple syrup, pumpkin seeds and hemp hearts. Add some fresh berries too!
