Roasted Cauliflower Bites
Ingredients:
1 medium head of cauliflower cut into bitesize florets
1 garlic clove, finely chopped
1 tablespoon extra virgin olive oil
1 teaspoon curry powder
1/4 teaspoon salt
1/2 cup grated parmesan cheese OR vegan dairy free option 1/2 cup nutritional yeast
Method:
Preheat oven to 180°C.
Thoroughly combine garlic, olive oil, curry powder and salt in a large mixing bowl.
Add cauliflower florets and mix well until evenly coated.
Spread onto a lined baking tray.
Sprinkle with either parmesan or nutritional yeast (we tried both ways, half and half).
Bake for 25-30 minutes (keeping an eye on them, flipping occasionally), until the desired golden colour is reached.
Now… EAT! You can dip in hummus or hot sauce or siracha-mayo - YUM!
