Leafy Greens - Why do we love them?
Leafy greens are absolutely a super food in our books! They include kale, spinach, cabbage, broccoli, lettuce, chard, bok choy, watercress, fresh leafy herbs and many more.
The regular consumption of leafy green vegetables is associated with multiple health benefits including weight management, gut health, heart health, reproductive health and mental health.
Leafy greens are low in energy (kJ/calories) and rich in fibre, they are nutrient dense packed with antioxidants, vitamins such as vitamins A, C, E, K, and B9 (folate), as well as minerals such as iron, calcium and magnesium.
Cruciferous Vegetables
Under the umbrella of leafy greens comes a specific family known as cruciferous vegetables.
These include: broccoli, cauliflower, kale, Brussels sprouts, bok choy, rocket, collard greens, watercress and more.
These vegetables contain a particular group of phytochemicals or sulphur containing compounds called glucosinolates. Research shows these compounds are associated with many health benefits such as:
- anticarcinogenic properties which may prevent or slow the progression of cancer
- anti-inflammatory and antioxidant properties which may improve muscle, joint, nerve and brain health
- they may improve cholesterol, blood pressure and blood glucose levels
How to add more leafy greens to your diet at home.
- Woolworths/Macro stock frozen organic spinach and kale cubes which are cheap and super handy to throw into smoothies or sauces and soups. These are a freezer favourite for my family.
- Green smoothies or pancakes by adding a handful of spinach or kale to your usual recipe
- Baked or air fryer kale chips
- Sautéed greens with garlic and mushrooms for a great addition to your weekend breakfast
- Shredded through soups, stir fries and steamed alongside any meal with a squeeze of lemon!
- Aim to use spray free or organic produce wherever possible to limit and prevent pesticide exposure.
