The Savoury Granola Recipe

I did declare 2024 the year of no more boring salads. I've always had a love/hate relationship with salads, feel like they're more of a starter or a side dish. I get sort of anxious if someone thinks we will be having a salad as our main meal. But, through much research, I have found many many different ways that I can build a salad to make it feel more like a meal and less like a side including this savoury granola recipe. A few of my new found salad loving tips are mixing grains through leaves, adding fresh herbs always, ensuring there is PLENTY of protein in there to fill me up, cheese is always good, nuts and seeds for crunch, edamame beans (frozen beans from woolies), a bloody good dressing, plenty of roasted things.

This savoury granola recipe mixture below is made in the same way as our old Whole Bowl granola, but with a few spices, seeds and good old soy sauce. It is transformed into these delicious, moreish, crunchy clumps of goodness that can be sprinkled on just about everything. A salad, a poke bowl, a stir-fry, roasted meat, roasted veggies, eggs on toast - you catch my drift - there are very few things that this mix won't add value to. It's is also one of those gems that you can mix up every time depending on what you have available in the pantry.

Ingredients:

170g rolled oats

130g sunflower seeds

150g pepitas

200g almonds

90g white sesame seeds

2tbsp nigella seeds

3 tbsp fennel seeds

2 tsp salt

3 egg whites

80ml extra virgin olive oil

60ml maple syrup

2tbsp soy sauce

cracked pepper

How to make it:

Mix all ingredients together.

Spread on a baking paper lined tray.

Bake at 160 c for 50-60 mins - stir every 15 minutes.

Cool completely, break up any large chunks, sprinkle on everything.
