Ingredients:
1 ½ cups plain flour
1 cup wholemeal spelt flour
1 ½ teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
3 medium overripe bananas
2 large eggs
1 cup buttermilk
½ cup extra virgin olive oil
1 cup granulated sugar
1/3 cup ground flaxseed
1/3 cup hemp seeds
1 teaspoon vanilla extract
Method: Preheat your oven to 180°C. Line a loaf tin with baking paper to avoid sticking. In a large bowl, mash the bananas. Combine the bananas with the eggs, buttermilk, oil, sugar and vanilla. Add flours, baking powder, salt and seeds. Mix until just combined. Pour into lined baking tin. Optional: add sliced banana and/or a sprinkle of seeds on top. Bake for 60-70 minutes. Check the loaf is cooked through by inserting a knife, it will come out clean when ready. Let the loaf cool before slicing.
