I suggest making these early or late because having the oven on in this weather is not ideal! I think using the air fryer would be great!
1.5 cups almond flour or meal (more fibre)
1 zucchini, grated
1/2-1 cup finely grated hard cheese (or use 1/2 cup nutritional yeast for dairy free)
2 free range eggs (or flax egg for vegan)
1/2 teaspoon turmeric
1 heaped teaspoon cumin
1 teaspoon baking powder
1/2 teaspoon iodised salt
Cracked black pepper
Preheat oven to 175°
Mix everything together in a large bowl.
Use two large spoons to quenelle onto lined baking tray.
Bake for 20-30 minutes until cooked through and crispy on the outside.
Serve hot or cold.
