It's officially that time in this weird hazy period of December that we have had enough of the Christmas leftovers, we are done with the rich, salty meats, potatoes (jks, potatoes forever), and cheeses. We are ready to move on with our lives and nourish our bodies. Thanking them for their efforts during the December madness with some rainbow coloured nutrient dense meals.
While I love the process of planning the Christmas menus, cooking for the days leading up to lunches, the parcels of leftovers stacked in the fridge to be munched on for breakfast, lunch and dinner in the week that follows. I am ready to get back to wholesome basics, fuel the family with some nutritious meals and focus on regaining my strength for the month and year ahead.
