I find oven-tray-bakes to be the easiest way to get a nutritious meal on the table and they can be tuned to whichever cuisine you fancy.
Pick your protein - I used tofu.
Pick your veggies - I used zucchini and capsicum.
Pick your seasoning - I used miso, sesame oil, maple, rice vinegar and chilli flakes.
Pick your toppings for after the oven - I used spring onions, coriander and a few squeezes of lime.
