This is on repeat for me at the moment - so much so that Elle is getting bored watching me eat it everyyyyy day BUT IT’S SO GOOD 😍
All you need is…
- Cooked and cooled quinoa - I liked to cook it in vegetable stock or salted water for more yumminess.
- Steamed and cooled broccoli.
- Veggies & Beans: today I used tomatoes, cucumber, sweet corn, black beans, red onion, parsley
- Dressing: lemon juice, olive oil, salt, pepper.
Optional: Boiled eggs. Hummus. Goats cheese.
