This recipe couldn’t be easier and is REALLY yum. A good use of all of the cheap strawberries and blueberries we are so lucky to have in season at the moment. You can also use frozen berries if you need to. I have been putting it in smoothies and on top of my yoghurt and granola too!
Strawberry & Blueberry Chia Jam
500g (2 punnets) strawberries
125g (1 punnet) blueberries
1 tbsp chia seeds
1 tbsp lemon juice
1/3 cup organic maple syrup
1 tsp vanilla extract
Put all of the ingredients except the chia seeds into a saucepan over a high heat.
Cook for 15 minutes while stirring occasionally until everything has come together and is soft.
Mix in the chia seeds.
Spoon mixture into sterilised jars and place in fridge to cool and then enjoy!
