1 tbsp EVOO
1 red onion (or brown, whatever you got), chopped
3 cloves garlic, chopped
1 head broccoli, chopped
3-4 potatoes, chopped
1-2 sticks celery, chopped
3-4 cups veggie stock (can recommend San Elk)
1 tbsp red miso
1 handful baby spinach
1 tin cannellini beans
1 cup green peas
Lightly fry onion and garlic in olive oil.
Add broccoli, potato, celery, stock and miso - pop the lid on for 15-20 until potatoes tender.
Add beans, spinach and peas, put the lid back on for 5 minutes.
Blitz soup up with a hand mixer, add a little lemon juice to lift and season as required.
