Green Ricotta & Halloumi Fritter Recipe
I made a huge batch of these last week and they were so great to have on hand to heat up for quick breakfasts and lunches. Add some tomatoes and avocado, add an egg, also great on their own. A fantastic and tasty one-handed snack.
2 x Zucchini grated, water squeezed out
4 x frozen spinach cubes (1/2 cup) defrosted and drained of liquid
1 jar marinated artichokes, drained and roughly chopped
A few sprigs of dill, finely chopped (whatever other fresh herbs you have on hand)
500g ricotta
180g Halloumi block, grated
4 x free range eggs, lightly whisked
1 cup plain or spelt flour
2 tsp baking powder
lemon zest
juice of half a lemon
salt & pepper
Extra Virgin Olive Oil for frying
Mix the veggies and cheeses together well, add the eggs, flour, baking powder, zest, juice and season. Mix well until a light batter has been formed.
Heat the oil in a fry pan, shallow fry until golden brown on either side and cooked through. Lay on paper towel to cool, sprinkle with sea salt flakes. Serve with veggies, yoghurt, eggs or on their own. These are delicious with a good quality crispy chilli oil too.
