Beautiful Baked Oatmeal

baked oatmeal with figs, plums, blueberries, nuts and seeds

 Perfect for these rainy mornings or any morning really!

Prepare to share with the family or keep in the fridge for weekday breakfasts.

Preheat oven to 180°c

Mix together in a baking tray:
2 cups rolled oats
1 tsp baking powder
1 tsp cinnamon
1 tbsp chia seeds
2 cups milk of choice
2 tbsp maple syrup
1 tsp vanilla extract
1/4 cup raw almonds
1/4 cup pumpkin seeds
2 fresh plums
1/2 cup frozen blueberries
Top with 4 fresh figs
Bake for 20-30 minutes or until liquid has soaked up and fruit is soft
Enjoy with yoghurt xo
