An easy base recipe to nail that I got from Daisy, once you have the base sorted, you can add to it whatever you have in your fridge / whatever the kids will eat at that time. Fussy toddlers require many options in your kitbag, this is a good addition. Pat (1yo) loves these, I often add broccoli, spinach and cheese. Bake in a tray or muffin tins. Freeze for easy snacks or breakfasts. 10 eggs 1 cup dry quinoa 2 cups liquid stock 1 cup water olive oil 100g spinach 1 head broccoli 100g cheese (optional - leave out to make dairy free) Cook the quinoa in water and stock. Cool the quinoa. Cook broccoli in oven or boiling water (or grate so it is in small pieces that will cook in the egg mixture). Lightly fry spinach in olive oil. Cool. Crack all of the eggs into a large bowl, add in cooled quinoa, cooled veggies and cheese. Mix well, pour into a lined baking tray and cook in 180°c oven for 30-40 until set. Cool, slice and serve.
