Banana & Oat Muffin Recipe
Full of nutritious galactagogues for Mumma and a couple of dark choc chips on top so the toddler will love them too!
These yummy muffins can be made in one bowl – minimal clean up and effort required.
I always put bananas in the freezer when they are turning bad so am always looking for new things to bake with them.
Ingredients:
1/3 cup coconut oil, melted
1/2 cup maple syrup
2-3 bananas, mashed
2 eggs, lightly whisked
1/3 cup milk of choice (or water)
1 tsp baking powder
1 tsp vanilla extract
1/2 tsp salt
1/2 tsp cinnamon
1 ½ cup wholemeal flour
1/2 cup oats
1 tbsp flax seeds, ground or whole (optional)
1 tbsp brewers or nutritional yeast (optional)
1 tbsp hemp seeds (optional)
Dark choc chips to top
Method:
Preheat oven to 170 degrees
Combine coconut oil, maple syrup, bananas, eggs and milk in a large bowl.
Gently stir in baking powder, vanilla, salt and cinnamon.
Add the rest of the ingredients and mix into a batter.
Divide into greased muffin tins, sprinkle with choc chips and bake for 20-25 minutes.
