Ingredients
extra virgin olive oil
1 x leek
1 x large head of cauliflower
3 x small-medium potatoes
1 x large garlic clove
50 grams raw cashews
3 x cups stock or broth of choice
extra water, salt & pepper, + optional toppings
Method
- place the cashews in a bowl and cover with boiling water for 1 hour or more
- clean and prep all the veggies
- in a large pot sauté the sliced leek in olive oil until softened
- add the chopped cauliflower, potatoes and garlic
- add the liquid stock or broth and then add more water until all the veggies are covered
- cover with a lid and bring to the boil, simmer until caulifower and potatoes are completely soft
- drain the cashews and add to the pot
- use a hand blender to blend until smooth
- taste and season
- serve hot with your favourite toppings e.g. parmesan, nutritional yeast, hemp seeds, pumpkin seeds, croutons...
