Banana & Cinnamon Buckwheat Muffins for Mama & Little Ones 🧁🍌
Makes 8 mini muffins
(gluten free, dairy free, sugar free)
3 ripe bananas (mashed)
2 eggs
1/4 cup olive oil
3 tablespoons hemp seeds
5 soft prunes (chop really small)
1 cup buckwheat flour
2 teaspoons cinnamon powder
2 teaspoons baking powder
Mash the bananas and mix with the eggs and oil. Add hemp seeds and chopped prunes. Add the baking powder, cinnamon and flour. Combine well. Spoon into muffin tray and bake at 180°C for 20-25 minutes or until cooked through. Cool on a rack. Store in an airtight container in the fridge for up to 3 days.
