We love a week night meal that comes together in minutes with just a few ingredients, very little effort, but big flavours (and toddler / partner approval)!
Last week this dinner was ready in 15 minutes! Made with a toddler at the ankles. Who then absolutely devoured these noodles! 🏆
Then... true story my husband got home from work drinks and sat down to eat the leftovers - he proceeded to ask me where I got the delicious takeaway from?!

Tahini Maple Soy may not be a combo you have considered before but take it from us - this sauce is SO delicious. If it's your first time, it won't be your last time. And no, it's not some strange concoction we have just thought up in the kitchen. It is a thing!
These Umami noodles will always be in my meal rotation.
Ingredients
1/2 white cabbage + 1 leek, finely shredded
2 garlic cloves, minced
1 teaspoon sesame oil
3 tablespoons tahini
1 tablespoon soy sauce
1 tablespoon maple syrup
1 tablespoon rice vinegar
1 tablespoon water
200g Buckwheat Soba Noodles (or your preferred noodle!)
Your Choice of Protein
Method
- saute the cabbage, leek and garlic in the sesame oil until softened
- stir together tahini, soy, maple, vinegar and water until well combined and smooth
- prepare and cook your choice of protein
- cook your noodles as per packet instructions
- stir sauce through cooked noodles, then toss vegetables through the saucy noodles
- add your protein and serve
