A delicious way to use up that kale that has been sitting in your fridge. Kale is a superfood in our books! Rich in vitamins, minerals, antioxidants and fibre.
You will need: 10-15 minutes(?) Half a BIG bunch of Kale (Tuscan preferred) Garlic (as much or as little as you like) A tin of beans (I love butter beans) drained and rinsed Homemade bread crumbs Salt to taste Generous glugs of extra virgin olive oil (EVOO)
Method: Wash and shred the Kale Mince the garlic (I like to grate it) Saute the garlic in EVOO until softened but not browning Add beans and bread crumbs to the garlic and saute until golden Put the garlicky bean mixture to the side in a bowl Drizzle some more EVOO into your pan and saute the kale until softened Mix through the beans and serve
