In The Spotlight: Our Slow Cooked Beef Ragu

As I pull out our slow cooked beef ragu to defrost for dinner, I thought I would share why it's a good one for the whole fam and how I like to reheat it for the most delicious bowl of pasta. This is one of our most popular postpartum meals. 
 
We sous vide our grass fed beef in it's ragu sauce which means we seal the meat and sauce, and cook it at a low temp in a water bath to create delicious, ragu-infused, fall-apart beef chunks. Our ragu sauce is created with extra virgin olive oil, garlic, onion, carrot, red wine, San Elk organic veg stock, tomato passata and bay leaves.
 
I like to reheat our slow cooked beef ragu on the stove top once defrosted, bringing it to a simmer and leaving it on a low simmer for 20 mins before pouring over my favourite pasta. This re-awakens the beef chunks that begin to break down in the sauce, that also thickens it even more. Top it with cheese (parmesan is my fave), a sprinkle of salt and pepper, and voila! YUM.
 
Our beef is hormone-antibiotic-chemical-grain free, and pasture raised.
