Veg Packed Sausage Rolls ✨

Keep a freezer stash for easy lunches and dinners 🤹🏻♀️
A great toddler meal recipe to have on hand for the easy win dinners.
- 500g beef mince
- Extra Virgin Olive Oil
- 2 cloves garlic, minced
- 1 carrot, grated
- 1 head broccoli, grated (can use zucchini instead)
- 2 eggs, lightly whisked - 1 for mixture and 1 for brushing
- 1-2 sheets spelt butter puff pastry, cut in half (Careme or Pampers Butter Puff Pastry best options)
Pan fry the garlic, broccoli and carrot in a little bit of olive oil until soft, cool mixture.
Mix the vegetables with the mince and 1 egg.
Lay the mixture down the middle of the pastry sheet, brush the edges with some of the egg, wrap and seal shut.
Cut to the size of the rolls you want.
Bake 200°c oven for 20 mins 👏
