Postpartum Snack Recipe | Oat Banana Cookies

When scrolling the internet for a postpartum snack recipe, there are so many options out there. This is a great postpartum snack recipe as these oat banana cookies are nutrient dense, made using wholefoods, new mums and toddlers alike love them. I swap out the chocolate for dates whenever one of the kids is a little constipated because I know they will eat them. These Oat Banana Cookies are great to munch on and we highly recommend doubling (or tripling) the recipe. 

I’ve seen a lot of these type of cookie recipes going around recently and had to try them for myself.

YUM!

Ingredients:

2 ripe bananas

1 cup of rolled oats

1/2 cup peanut butter

2 tablespoons maple syrup

1/3 cup desiccated coconut

1/3 cup dark chocolate chips

Method:

Mash the bananas really well

Stir in all other ingredients

I used a 1/4 cup sized scoop to portion mixture into a baking tray (too wet to handle), this made 8 cookies

Bake at 175°c for 15 minutes.

They are cheap, tasty and versatile. Ways to include oats in your diet: cookies, swapping some flour for oats in many sweet or savoury baking recipes works really well, breakfast porridge/oatmeal, fruit crumbles, bliss balls, Bircher/overnight oats, granola, healthy flapjacks.
