Postpartum Snack Recipe | Oat Banana Cookies

When scrolling the internet for a postpartum snack recipe, there are so many options out there. This is a great postpartum snack recipe as these oat banana cookies are nutrient dense, made using wholefoods and new mums and toddlers alike love them. I swap out the chocolate for dates whenever one of the kids is a little constipated because I know they will eat them. These Oat Banana Cookies are great to munch on and we highly recommend doubling (or tripling) the recipe. 

I’ve seen a lot of these type of cookie recipes going around recently and had to try them for myself.

YUM!

Ingredients:

2 ripe bananas

1 cup of rolled oats

1/2 cup peanut butter

2 tablespoons maple syrup

1/3 cup desiccated coconut

1/3 cup dark chocolate chips

Method:

Mash the bananas really well

Stir in all other ingredients

I used a 1/4 cup sized scoop to portion mixture into a baking tray (too wet to handle), this made 8 cookies

Bake at 175°c for 15 minutes.


Oats oats oats: why are they so great and why do we want to include them regularly in our diet?

Oats contain lots of fibre that fuels the healthy gut bacteria, insoluble fibre that aids in digestion and detoxification, a particular soluble fibre called beta-glucan which provides benefits such as controlling blood glucose and cholesterol levels, oats are also a high protein grain, they are an excellent source of many micronutrients including iron, zinc, magnesium and b-complex vitamins. They are cheap, tasty and versatile. Ways to include oats in your diet: cookies, swapping some flour for oats in many sweet or savoury baking recipes works really well, breakfast porridge/oatmeal, fruit crumbles, bliss balls, Bircher/overnight oats, granola, healthy flapjacks.
