Ingredients
2 tablespoons of extra virgin olive oil
1 small brown onion, diced
2 garlic cloves, minced
1/4 teaspoon garam masala
2 teaspoon ground cumin
1 teaspoon turmeric
1 tablespoon ginger paste (or grated fresh ginger)
1.5 cups dry split red lentils
2/3 cup crushed tinned tomatoes
2 cups vegetable stock
2 cups water
optional: 2 tablespoons peanut butter
Method
Fry the spices, onion, garlic and ginger in the oil for a couple of minutes until aromatic, don't let them burn. Add the lentils, stock, water and tomatoes. Simmer until the lentils are cooked. Stir in the peanut butter before serving.
